You will love these protein packed, paleo-vegan friendly energy balls. Not just because they are free of refined sugar and deliciously healthy, but also because they are perfect for those who love to eat sweets. My favorite meal of the day is breakfast, and I love eating sweets in the morning. These energy balls make it so easy for me to start my day. I usually pair them up with some sliced bananas, blueberries and peanut butter. It really helps stopping my cravings, and also fill me up so easily. This recipe makes about 14 balls so you can have them anytime throughout the week, or do what I do share it with your co workers . Another reason for me to love these energy balls is that I can share them with my vegan friends, or people who follow paleo diet. 12 medjool dates pitted
1/3 cup unsweetened coconut flakes ( this is excluding the amount I used to cover the balls,you will need extra to cover them up)
1/2 cup mixed nuts ( I used pistachios, almonds, peanuts)
1 1/2 tbsp. cocoa powder
1 tbsp. water
1 tbsp. extra virgin unrefined coconut oil
1. Combine all of the ingredients above in a blender.
2. Make little bowl with the mixture.
3. Cover with coconut flakes. Enjoy!
