Another sweet breakfast idea for sweet tooths who like to keep it healthy and yet still delicious. I always try to play with recipes that I find online. As you may know, there are too many of them! I think what makes a good dessert recipe is how easy it is to make and how nutritious the ingredients are. This incredibly easy paleo vegan protein bar will help you get the sweets you need in the morning or during the day and the best part is you can eat them quilt free. I love to share my food with co workers, friends, and family. All the people who surround me. I have lots of friend with dietary restrictions, they are vegans or they cannot have gluten or they strictly follow ketogenic diet. This means I need to be extra careful what I put into my food, alter the recipe and make it as simple as possible so I can broaden the type of diets it can be applied. As for me, I am not a vegan, vegetarian or strictly following any specific diet. But I do enjoy trying different recipes which are vegan or paleo. I like real food and I want to feel I am treating my body the way it needs to be treated. Now, let talk about this paleo vegan protein bar. It only requires 4 ingredients apart from the glaze which is very optional and it doesn’t need it trust me. I made this recipe twice and one of them did not have the glaze since I did not have time to do it. I will share both of the photos below, you can decide which one you would like to try. I have to say glaze does add an accent to it.
Also I would like to add one more detail about this deliciously healthy paleo vegan protein bar recipe. I made this in a circular dish which you can see below in the picture and it makes about 6 small squares. If you would like to make more, you can simply multiply the ingredients and use a bigger dish. Now if you are as excited as I am to know more about the ingredients and the recipe let get into it.
- 1 cup pitted medjool dates (about 12 pieces of dates)
- 3 tbsp. cocoa powder
- 1/2 cup raw walnuts
- 1 tsp. water
- A few raw pistachios (optional)
For the Glaze:
- 2 tsp. coconut oil
- 1 tbsp. maple syrup
- 2 tbsp. cocoa powder
- Combine dates, cocoa powder, walnuts and water in a high speed blender. After its blended well, transfer to the dish.
- If you are going for the glaze just melt coconut oil and combine with maple syrup and cocoa powder. Spread it on the protein bar you transferred to dish.
- Refrigerate at least 2 hours and top it with your favorites, I chose pistachios!
